
My mum said that these were the best homemade cookies she thinks she has ever tasted and coming from a devoted housewife/cook/baker that's really saying something! And without sounding too cocky yeah, they were pretty damn good! I have had a little week where I haven't been working and have spent the last few days soaking up being at home and enjoying some space and the fresh air of the Moray Firth coastline. Been taking advantage of free ingredients too and decided to raid Mum's cupboards to see what I could bake this morning with what was lying around. If you would like to try to make these yourself then the recipe is below...
1/2 cup coconut oil
1/2 cup soft brown sugar
1/2 cup granulated sugar
1 cup plain flour or all purpose flour
1 cup rolled oats (like the Scots ones with the handsome man on the front)
1 cup desiccated coconut
1 large egg (preferably free range)
bit of baking powder about a teaspoon
bit of cinnamon
vanilla extract (optional)
50g or more if you're a chocolate lover of chocolate drops or just a bashed up dark chocolate bar ( i used Bournville dark chocolate, was my Grandpa's favourite!)
Pre heat oven to about 200degrees ( I normally cook practically everything at this heat, nice round number! ) or if using an AGA like I was then use top right oven.
Add sugars, egg and coconut oil and vanilla to large basin and whisk. If your coconut oil is rock hard cos it's been in the fridge like mine was, stick it in the microwave for 2 mins and will turn to a liquid.
Add dry ingredients - flour sieved, cinnamon, baking powder, desiccated coconut, oats and chocolates chucks or drops.
Give it a stir with a good ol' wooden spoon till mixture looks like above picture. It ill be sticky but firm, OOFT!
Then use your hands if your dirty to pat a wee handful down into a cookie shape and place on baking tray (with greaseproof paper if you wish!) or stone plate as shown above. They will spread out a bit when cooking so give them some breathing space!
If you don't like being dirty then use a cookie cutter...sensible option!!
Whack them in the oven for 9 minutes ish or until a bit golden, take out to cool on a cooking rack and get fired in with a good cuppa!
